 Baked Potato Casserole
 

this is like a loaded baked potato in casserole form. Great for pot luck. very very fatty meal but oh so delicious.

Basic ingredients:
Red potatoes
sour cream
mayo
butter
bacon

Method:
*boil potatoes till soft. toss with butter
*cook bacon until crispy. and then crumble into separate dish.
*place in casserole dish, add all the rest of ingredients (except bacon). you can add the bacon at this time, i didnt because i feared it would become rubbery as it baked in the oven. place aluminum foil over dish and place in oven. bake for about 45 minutes.
*remove foil cover and top with some bacon, and the rest of the cheese. bake until cheese is melted.
*serve with the extra bacon on the side if people want more.

they loved it.
Jim suggested adding broccoli, if i did that i might add more cheese also.
he also suggested serving it with sour cream and/or ranch to dip in
my mom suggested i could put ham in it too.

 Shepard's Pie
 

this is one of Jim's favorites. If you have never had this it might not sound to appetizing by the name but remember to never judge a book by its cover.

Basic ingredients:
Ground beef
corn
concentrated tomato soup
garlic
red potatoes
milk
butter
cheese

Method:
*boil potatoes, smash with milk and butter and set aside
*brown ground beef, drain off excess fat
*add corn and tomatoe soup
*simmer for a bit, then add mixture to casserole dish.
*smooth potatoes over that and top with cheese
*place in oven til cheese is melted.

Feedback: (mainly Jim, also my parents)
they all love it.
Jim says this is better then the one his mom makes, thats the biggest compliment you can ever get!!

 Chili Cheese Dogs in Beach Blankets
 

This is like a dinner sized pig in a blanket. fun meal for kids

Basic ingredients:
hot dogs
chili
cheese
pizza dough

Method:
*roll out pizza dough and cut up into rectangles where when rolled around the hot dog you would have plenty of room to pinch it closed.
*On top of dough rectangle place some chili and cheese, then place dog on top.
* seal up ends of dough around dog. the ends of the hot dog should poke out a little.
*bake in oven until golden brown.

you can eat these with a knife and fork or with your hands like a hot pocket.
i noticed if you use a chili with kidney beans you might want to smoosh the beans a bit so there is plenty of room in the "beach blanket

 Baked Bean Casserole
 

As you will find out I love casseroles. Fairly easy to make, tastes delicious, nice presentation, all wrapped up in one dish. how does it get better than that.

Basic ingredients:
baked beans (preferably brown sugar kind)
hot dogs
Jiffy corn bread mix (and whatever the box says you need to make this, i think its eggs and milk, but dont take my word)
chilli powder
cheese

Method:
*cook sliced hot dogs in baked beans in a skillet until warm.
*place in casserole dish
*in separate bowl mix up jiffy mix, chilli powder and cheese.
*top baked beans with bread mix and smooth out.
*bake in oven till bread is golden brown.

They loved it.
The only thing i didnt like is that the corn bread did not cook properly on the bottom, where it is touching the baked beans-need to improve that somehow.

 Philly Cheesesteak Mac and Cheese
 

I posted the Mac and Cheese first because there are so many variations to this meal that you can make... and here is one of them:

Basic ingredients:
Same as Mac and Cheese but add...
deli sliced roast beef (cut into inch pieces)
bread crumbs

Method:
*cook the same as Mac and Cheese
*before you place in oven add the roast beef
*top with bread crumbs
*bake in oven for about 15-20 minutes
